Peking Style Chicken Recipe

Ingredients
  • 1/4 c white wine vinegar .
  • 2 garlic cloves, finely sliced .
  • 1/4 c soy sauce .
  • 4 chicken breast fillets .
  • 1/4 bunch shallots, shredded (green onions) .
  • 6 cm ginger, shredded .
  • 2 cucumbers, cut into thin shreds .
  • 1/2 c hoisin sauce .
  • 6 tortillas

Directions
  • Step #1 Trim chicken fillets of all fat & sinew.
  • Step #2 Place hoisin, soy, vinegar, garlic & ginger in large bowl & stir.
  • Step #3 Add chicken & marinate for 20 mins.
  • Step #4 Remove chicken from marinade, reserving the marinade.
  • Step #5 Cook chicken on hot bbq or under a hot grill 4 mins each side.
  • Step #6 Remove & stand 5 mins.
  • Step #7 Cut tortillas in half, wrap in foil wrap andwarm in the oven.
  • Step #8 Place remaining marinade in a small suacepan & heat until mixture boils.
  • Step #9 Pour the hot mixture into a serving bowl.
  • Step #10 Slice chicken into strips (I sometimes pre-slice my chicken & grill it that way to save this step - but cook the chicken for less time).
