Chocolate Chip Marzipan Cake Recipe

Ingredients
  • 1 1/2 tsps baking powder .
  • 1/2 tsp salt .
  • 115 g butter (preferably unsalted) .
  • 2 eggs .
  • 3 tbsps cocoa powder .
  • 125 g marzipan, sliced .
  • 4 tbsps plain chocolate chips or coarsely sliced chocolate .
  • 150 g all-purpose flour .
  • 150 g light muscovado sugar or light brown sugar

Directions
  • Step #1 Preheat oven to 180°C.
  • Step #2 Grease & flour a 20 x 11 cm (8" x 4") loaf pan & line the bottom with parchment paper.
  • Step #3 Cream butter & sugar until light & fluffy.
  • Step #4 Add eggs one at a time, beating well after each addition.
  • Step #5 Sift in flour, baking powder, salt & cocoa powder, fold in the batter.
  • Step #6 Mix sliced marzipan & chocolate chips in a bowl; set aside about 4 tbsps & fold the rest into the cake batter mixture.
  • Step #7 Pour batter into the prepared pan, level the top & sprinkle the reserved marzipan & chocolate chips on top.
  • Step #8 Bake in the preheated oven for 45-50 mins, or until risen & firm.
  • Step #9 Cool in the pan for a few mins before turning out to a wire rack to cool completely.
