Cinnamon Tea Cake Recipe

Ingredients
  • 1 egg, lightly beaten .
  • 2 oz butter .
  • 1/2 c milk .
  • 1 tsp ground cinnamon .
  • 3 tbsps all-purpose flour (plain) .
  • 1 tsp vanilla extract .
  • 3/4 oz butter, melted .
  • 1 tbsp caster sugar, extra .
  • 1/2 c caster sugar .
  • 3/4 c self-raising flour

Directions
  • Step #1 Preheat the oven to moderate 350F (Gas 4/180C).
  • Step #2 Grease a 20cm (8 inch) round cake tin & line the base with baking paper.
  • Step #3 Beat the butter (2 oz) & sugar (1/2 c) until light & creamy.
  • Step #4 Add the egg slowly, beating well after each addition.
  • Step #5 Beat in the vanilla.
  • Step #6 Fold in the sifted flours alternately with the milk.
  • Step #7 Stir until smooth.
  • Step #8 Spoon into the tin & smooth the top.
  • Step #9 Bake for 30 mins, or until a skewer comes out clean when inserted into the center.
  • Step #10 Cool for 5 mins in the tin, then on a wire rack.
  • Step #11 Brush top of cake with melted butter while still warm & sprinkle with the sugar & cinnamon mixture.
