Chorizo, Bean And Butternut Squash Chilli Recipe

Ingredients
  • 1 tbsp dark brown sugar .
  • 2 garlic cloves, finely sliced .
  • 225 g spanish chorizo sausage, peeled & sliced .
  • 20 g fresh parsley, roughly sliced .
  • 500 g sliced & peeled butternut squash .
  • 1 large red chili, sliced .
  • 1 red pepper, deseeded & sliced .
  • 1 onion, finely sliced .
  • 1 (400 g) can cannellini beans, drained & rinsed .
  • 2 tbsps olive oil .
  • 2 (400 g) cans sliced tomatoes

Directions
  • Step #1 Heat the oil In a large-ish pot & cook the onion & garlic for a few mins.
  • Step #2 Add the chorizo & red chilli & cook for another 1-2 mins.
  • Step #3 Add the tomatoes, sugar, pepper & 150ml cold water.
  • Step #4 Cover up & let simmer for 10 mins.
  • Step #5 Stir in the squash, cover & let simmer for 45 mins, stirring every once in awhile.
  • Step #6 Add the beans last & cook for a final 5 mins.
  • Step #7 Stir in the parsley & serve.
