Chicken Breasts With Cornmeal Crust And Black Bean Salsa Recipe

Ingredients
  • 1 (15 oz) can sweet corn, drained .
  • 1/2 c red onions, sliced finely .
  • 1 (15 oz) can black beans, rinsed, drained .
  • 4 tbsps olive oil .
  • 1 tbsp olive oil .
  • 4 chicken breasts, lbed thinly .
  • 1 tbsp ground coriander .
  • 1/2 c sliced fresh cilantro .
  • 1 tsp sugar .
  • 1/3 c yellow cornmeal

Directions
  • Step #1 Place first 6 ingredients In a large-ish bowl.
  • Step #2 Toss to mix, season this with salt & pepper.
  • Step #3 Cover up & let this stand for 1 hr.
  • Step #4 Mix cornmeal & coriander in a shallow bowl.
  • Step #5 coat the chicken breasts with olive oil & then dredge in the cornmeal.
  • Step #6 In a large skillet heat the olive oil on med/high & saute the chicken breasts until golden on both sides, about 5 mins a side.
  • Step #7 Serve with the black bean salsa, rice & "Three pepper slaw with chipotle dressing".
