Irish Soda Bread Recipe

Ingredients
  • 8 tbsps butter .
  • 1/2 tsp salt .
  • 3 c flour, sifted .
  • 1/2 tsp baking powder .
  • 1/2 c granulated sugar .
  • 1 1/2 c buttermilk .
  • 1 tsp baking soda .
  • 1 1/2 c raisins .
  • 1/4 tsp cream of tartar

Directions
  • Step #1 Grease a 9 inch pie tin.
  • Step #2 Line bottom & sides with wax paper or parchment paper.
  • Step #3 Grease paper.
  • Step #4 Preheat oven to 350°F.
  • Step #5 Sift together all dry ingredients & set aside.
  • Step #6 In a large bowl with electric mixer, cream butter & sugar until light & fluffy at medium speed.
  • Step #7 Reduce speed to low & add flour mixture alternation with buttermilk, beating well after each addition.
  • Step #8 Begin & end with flour mixture.
  • Step #9 Stop mixer & scrape bottom & sides of bowl as needed.
  • Step #10 Mix in raisins.
  • Step #11 Spread batter evenly in pan.
  • Step #12 Bake in middle of oven for 1 hr to 1 hr 10 mins, or until a toothpick inserted in the center comes out clean.
  • Step #13 Remove from oven to a wire rack & cool in pan for 10 mins.
  • Step #14 Remove bread from pan, cut into wedges & serve warm.
  • Step #15 Cool remaining bread completely & wrap in a cotton dish towel.
  • Step #16 After one day wrap remaining bread in plastic wrap.
