Oregano & Lemon Pork Kebabs Recipe

Ingredients
  • 1 medium zucchini, cut into 3/8 inch thick slices .
  • 1 tsp rosemary sprigs .
  • 1 medium onion, cut into large chunks .
  • 1 garlic clove, crushed .
  • 8 medium white mushrooms .
  • 8 grape tomatoes .
  • 1 medium red pepper, cut into large chunks .
  • 2 tsps dried oregano .
  • 1 lb lean pork loin, cut into 1 inch cubes .
  • Choose 2 or 3 from a selection of vegetables .
  • 1 tbsp oil .
  • Marinade .
  • 1/4-1/2 tsp fresh ground black pepper .
  • 1/2 c lemon juice

Directions
  • Step #1 For the marinade mix all ingredients in a resealable plastic bag or non-reactive bowl.
  • Step #2 Trim the pork of all visible fat & cut into 1 inch cubes.
  • Step #3 Place cubes in bag & marinate in the fridge for 30 mins.
  • Step #4 (You can also toss the vegetables in if you like.
  • Step #5 Mushrooms & zucchini are especially good in absorbing the flavor.

  • Step #7 In the meantime soak wooden skewers in water.
  • Step #8 Wash & cut vegetables for kebabs.
  • Step #9 Thread kebabs alternating between the pork cubes & vegetables.
  • Step #10 Depending on the size of your pork cubes & the length of the skewers, you will have 1 large or 2 small skewers per person.
  • Step #11 Place on indoor or outdoor grill & cook for 8 to 10 mins.
