Sour Cream Walnut Breakfast Cake Recipe

Ingredients
  • For the cinnamon-walnut filling .
  • 1 c whole wheat flour (preferably whole wheat pastry flour) .
  • 3 eggs .
  • 1/2 tsp salt .
  • 1/2 c sugar .
  • 2 c all-purpose flour .
  • 1 1/2 c regular sour cream, beaten (don't use non-fat sour cream) or plain yogurt, beaten .
  • 2 tbsps confectioners' sugar, for dusting .
  • 1 1/2 tsps ground cinnamon .
  • 1 tbsp baking powder .
  • 1 tsp vanilla essence .
  • 1/2 c firmly packed brown sugar .
  • 1/2 c finely sliced walnuts .
  • 3/4 tsp baking soda .
  • 1 c granulated sugar .
  • 2 tbsps cold butter, cut into small pcs .
  • 3/4 c butter, softened

Directions
  • Step #1 First, prepare the cinnamon-walnut filling for the cake.
  • Step #2 Do to so, in a small bowl, cream together the sugar, cinnamon & walnuts.
  • Step #3 Your filling is now ready.
  • Step #4 Keep aside & proceed.
  • Step #5 Grease a lightly floured 10 inch bundt pan or tube pan with a capacity of 10-12 c.
  • Step #6 Preheat oven to 350°F.
  • Step #7 In a medium bowl, mix both the flours, salt, baking soda & baking powder together & keep aside.
  • Step #8 In a large bowl, cream together the 3/4 c butter with both the sugars until light & fluffy.
  • Step #9 Blend in the vanilla essence.
  • Step #10 In a separate bowl, beat eggs one at a time until light & fluffy.
  • Step #11 Add the beaten egg mixture, slowly to the creamed butter-sugar mixture & mix well to mix.
  • Step #12 Add the flour mixture to the creamed mixture alternating with sour cream or yoghurt, mixing to mix well after each addition.
  • Step #13 Spoon about 2 tbsps.
  • Step #14 of the Cinnamon-Walnut filling on the bottom of the well greased pan.
  • Step #15 Spoon in half of the batter in the greased pan.
  • Step #16 Sprinkle top evenly with about half of the remaining filling.
  • Step #17 Dot with 1 tbsps of the cold butter pieces.
  • Step #18 Add the remaining batter.
  • Step #19 Sprinkle top with the remaining filling.
  • Step #20 Dot with the remaining butter.
  • Step #21 Bake until the cake tests done {i.
  • Step #22 e.
  • Step #23 when a knife is inserted in the middle of the cake, it should come out clean}.
  • Step #24 Let the cake stand in the pan on a wire rack for about 10 mins.
  • Step #25 Invert pan to release the cake.
  • Step #26 Dust the top part of the cake with confectioner's sugar before serving.
