Cindy's Country Style Creole Pork Roast Recipe

Ingredients
  • 5 lbs boneless pork roast
  • 1/2 green bell pepper
  • 1/3 c bacon grease
  • 2 stalks celery stalk, sliced
  • 2 tbsps Creole seasoning, divided
  • 3 cloves garlic
  • 1 onion, cut into chunks

Directions
  • Step #1 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #2 Combine the onion, green pepper, celery & garlic in the container of a food processor/blender or mixer.
  • Step #3 Process until finely sliced.
  • Step #4 Stir in 1 tbsp of the Creole seasoning.
  • Step #5 Cut about 8 slits across the roast about 1/2 inch deep.
  • Step #6 Pack the vegetable mixture into the slits.
  • Step #7 Rub the remaining tbsp of Creole seasoning all over the roast.
  • Step #8 Coat the roast generously with bacon grease, & place this in a roasting pan.
  • Step #9 Bake uncovered for 1 hr, until browned, & continue cooking for about 3 more hrs, then cover, or until tender.
  • Step #10 After the roast is done, you can skim off some of the excess fat & thicken the drippings with a mixture of water & flour if you want your gravy thicker.
