Beanshoot, Avocado & Baby Spinach Salad Recipe

Ingredients
  • 4 tbsps asian fish sauce .
  • 1 red capsicum, cored, seeded & sliced .
  • 4 large garlic cloves, grated .
  • 100 g bean sprouts .
  • 2 tbsps japanese rice vinegar .
  • 1 avocado, sliced .
  • 2 tsps shaved palm sugar .
  • 1/4 English cucumber, halved lengthways & thickly sliced .
  • 1 chili pepper, seeded & finely sliced .
  • 150 g baby spinach leaves .
  • 1 tsp freshly grated ginger .
  • 1/2 small red onion, finely sliced .
  • 2 tbsps water

Directions
  • Step #1 Place the fish sauce, palm sugar, rice vinegar, water, chilli, ginger & garlic in a bowl & whisk up.
  • Step #2 Taste for seasoning.
  • Step #3 In another bowl, mix together the baby spinach leaves, onion, capsicum, beanshoots, cucumber & avocado with dressing to taste.
