Potato Silk With Truffle Oil Recipe

Ingredients
  • white pepper .
  • salt .
  • 14 oz about 2 medium yukon gold potatoes, peeled, cut into1/2-inch pieces .
  • 4 tbsps butter, room temperature .
  • 1 c whole milk, heated .
  • 1/2 tsp white truffle oil (or more to taste)

Directions
  • Step #1 Cover up potatoes in cold, salted water in medium saucepan set over med-heat/flame & carefully cook potatoes until tender, about 15 mins.
  • Step #2 Drain; return to saucepan.
  • Step #3 Mash until smooth; transfer to processor.
  • Step #4 Bring milk to simmer in heavy small saucepan.
  • Step #5 Add hot milk, butter, & truffle oil to potatoes; mix until smooth.
  • Step #6 DO NOT OVER BLEND or the consistency will be gummy.
  • Step #7 Spice up with salt & white pepper.
  • Step #8 (Can be made 4 hrs ahead.
  • Step #9 Cover up & chill in the fridge.
  • Step #10 Stir over medium-low heat to rewarm.
