Summer Egg Salad Recipe

Ingredients
  • salt & pepper .
  • 50 g black olives, pitted .
  • 6 medium eggs .
  • 1/2 small red onion, very finely sliced .
  • 25 ml olive oil .
  • 750 g baby potatoes .
  • 185 g tuna in water .
  • 5 ml lemon juice .
  • 100 g cherry tomatoes, halved .
  • 200 g French beans .
  • 12 basil leaves .
  • 50 ml cider vinegar .
  • Dressing

Directions
  • Step #1 Boil the eggs for 5 mins.
  • Step #2 Plunge into cold water & peel at once.
  • Step #3 At the same time, boil potatoes for 20 mins.
  • Step #4 Drain & allow this to cool.
  • Step #5 Also cook french beans in boiling water until tender, but with some bite.
  • Step #6 (Or use the microwave oven.
  • Step #7 ).
  • Step #8 Halve the olives, slice the onion & drain the tuna chunks.
  • Step #9 Mix together the dressing ingredients & coat the potatoes & beans with the mixture.
  • Step #10 Arrange the tomatoes, olives, onion, tuna basil leaves & lastly arrange the quartered eggs.
