2 tbsps sliced fresh oregano or herbs, of your choice .
1 (400 g) can chickpeas, drained & rinsed .
Greek yogurt, to serve .
2 tbsps oil .
1 onion, sliced .
salt & pepper .
4 (200 g) fresh tuna steaks, 1 inch thick .
1/2 c white wine or chicken stock .
1 tbsp capers .
2 garlic cloves, crushed .
salt & pepper .
2 tbsps oil .
1 c boiling water .
1/2 c couscous
Directions
Step #1 Heat the oil In a large-ish pan & fry the onion about 5 mins or until soft.
Step #2 Add the crushed garlic & cook for a couple of mins more.
Step #3 Add the wine & cook for a few mins then add the tomatoes & chick peas.
Step #4 Allow to cook carefully for about 10 mins.
Step #5 Meanwhile, pour the boiling water over the couscous & cover for about 5 mins.
Step #6 Add the prepared couscous, herbs & capers to the tomato mix, season well with salt & pepper & set aside while you cook the tuna.
Step #7 Spice up the tuna steaks with salt & pepper.
Step #8 Heat the oil In a large-ish pan & cook the tuna about 4 or 5 mins each side: this will give you a rare steak, if you'd like it cooked more add a couple more mins each side.
Step #9 Remember though that it will keep cooking after you take it off the heat.
Step #10 Gently reheat the tomato mix for a couple of mins, then divide it between 4 plates & serve a tuna steak on each.
Step #11 Serve with a dollop of yogurt over each steak.
