Kansas Tomato Sandwich

• 2 large onions, sliced .
• 2 tbsps oil, your preference .
• salt & pepper .
• 1/2 c water .
• 1/2 tsp ground cinnamon .
• 1/2 tsp freshly ground black peppercorns .
• 1 green chili pepper, deseeded & sliced finely .
• 1 kg mutton, cut into 25cm pieces .
• 1 kg very ripe sunripened tomatoes, skinned & sliced .
• 1/2 tsp ground cloves

• Step #1 Cook onions, peppercorns, cloves & 1/2 c water in saucepan until water has evaporated.
• Step #2 Add oil & cinnamon & fry for 1 min, stirring constantly.
• Step #3 Add meat, stir thoroughly, turn down heat, cover with tight-fitting lid & let simmer for 30 mins stirring every once in awhile.
• Step #4 Add tomatoes & chili, adjust seasoning to taste, replace lid & let simmer for a further 45 mins stirring every once in awhile.
• Step #5 Serve with boiled potatoes & yellow rice.
