Jamaican Black Fuitcake Recipe

Ingredients
  • 2 tbsps brandy (optional) .
  • 2 tsps Kitchen Bouquet .
  • 1/2 tsp ground nutmeg .
  • 2 tsps . almond essence .
  • 1 lb flour .
  • 8 large eggs .
  • 1 (26 oz) bottle cherry brandy .
  • 2 tsps lime rind .
  • 1/4 lb almonds .
  • 1 tsp lemon essence .
  • 1 lb currants .
  • 2 tsps vanilla essence .
  • Step 2 .
  • 4 tsps baking powder .
  • 1 lb prunes (3 c) .
  • 1/2 lb glace cherries .
  • 1/4 lb mixed peel .
  • 1-2 tbsp Angostura bitters .
  • Fruit takes at least a month to macerate .
  • 1 lb sugar .
  • 2 tsps mixed spice .
  • 1 lb raisins .
  • 1 lb butter .
  • 1/2 c dark rum

Directions
  • Step #1 Cream butter & sugar.
  • Step #2 Add the eight eggs one at a time.
  • Step #3 Add lemon essence, lime rind, almond essence & vanilla.
  • Step #4 Mix & sift dry ingredients.
  • Step #5 Add slowly to creamed mixture.
  • Step #6 Mix in fruit & browning (add the browning until you get the colour your like).
  • Step #7 Put in greased tins doubly lined with brown paper.
  • Step #8 Bake at 250 F for 2-3 hrs or until done.
  • Step #9 Remove from oven & soak, while hot, with cherry brandy or rum with sherry.
  • Step #10 I make mine in mini loaf pans as I find it bakes easier & they are the perfect size for gift giving.
