Pistachio And Cranberry Rocky Road Recipe

Ingredients
  • 70 g raw pistachio nuts .
  • 1 1/2 c flour .
  • 180 g marshmallows, sliced .
  • 1/2-3/4 c blueberry flavoured cranberries .
  • 1/4 c cocoa .
  • 1/2-3/4 c raspberry flavoured cranberries .
  • 500 g dark chocolate .
  • 50 g vegetable shortening .
  • 1 egg .
  • 100 g butter, sliced .
  • 1/2 c icing sugar .
  • 3-4 tbsps cold water

Directions
  • Step #1 Method Place the flour, cocoa & sugar in a bowl.
  • Step #2 Lightly rub the butter into the flour mixture until it resembles crumbs.
  • Step #3 Add the egg & water & mix to make a pliable dough.
  • Step #4 Press into a paper-lined 20 x 30cm slice tin, using a floured tumbler to help roll the dough out evenly in the slice tin.
  • Step #5 Bake at 180 degrees Celsius for 10 mins or until the pastry is cooked.
  • Step #6 Cool.
  • Step #7 Melt the chocolate & kremalta together & pour over the marshmallows, cranberries & pistachio nuts & mix quickly.
  • Step #8 Pour the topping onto the cooled base & put in the fridge until set.
  • Step #9 Cut into bite-sized pieces & store this in the refrigerator.
