Beef & Andouille Burgers With Asiago Cheese Recipe

Ingredients
  • 1 (7 oz) jar roasted red peppers, drained .
  • pepper .
  • 6 slices red onions (thick slices) .
  • 8 oz andouille sausages, cut into pieces .
  • salt .
  • 1 c grated asiago cheese .
  • 2 1/2 lbs ground beef .
  • 4 sun-dried tomatoes packed in oil, drained .
  • 6 seasame seeds buns .
  • 1 tbsp whole grain mustard .
  • olive oil .
  • fennel seeds, crushed .
  • 2 shallots, minced .
  • 1/2 c mayonnaise

Directions
  • Step #1 -Finely chop sun-dried tomatoes in food processor/blender.
  • Step #2 Blend in mayonnaise & mustard.
  • Step #3 Transfer to small bowl & cover & chill in the fridge.
  • Step #4 Can be made up to 1 day ahead.
  • Step #5 -Finely chop andouille sausage in processor.
  • Step #6 Transfer to large bowl.
  • Step #7 Add beef, shallots, salt, pepper & fennel seeds.
  • Step #8 Stir with fork just until mixed.
  • Step #9 Form mixture into 6 patties.
  • Step #10 -Prepare barbeque on medium high heat.
  • Step #11 Grill hamburger buns until golden brown for 2min.
  • Step #12 Transfer to plate.
  • Step #13 Brush onion slices with oil.
  • Step #14 Sprinkle top with salt & pepper.
  • Step #15 Grill until golden about 7min.
  • Step #16 per side.
  • Step #17 Grill until desired doneness.
  • Step #18 Sprinkle top cheese over top of burgers.
  • Step #19 -Spread hamburger buns with sun-dried tomato mayonnaise.
  • Step #20 Top with red bell peppers.
  • Step #21 Top with onion slices.
  • Step #22 Then place hamburgers on & tops of buns.
