Lemon-sour Cream Mousse Recipe

Ingredients
  • fresh mint (to garnish) .
  • 2 lemons, juice & zest of, grated .
  • 2 (1/4 oz) packages unflavored gelatin, packets .
  • 6 egg whites .
  • 1/4 tsp salt .
  • 2 c sour cream .
  • 2/3 c sugar .
  • 8 oz cream cheese, softened .
  • 1/2 c ice water

Directions
  • Step #1 Pour the sugar into a medium bowl.
  • Step #2 Using your fingers work the zest into the sugar,.
  • Step #3 Pour the ice water into separate bowl & sprinkle the gelatin over the top.
  • Step #4 When the gelatin has soaked through, microwave on low for 1 min.
  • Step #5 (Don’t let the mixture boil or it won’t be usable).
  • Step #6 Beat the egg whites with the salt In a large-ish bowl until stiff but not dry.
  • Step #7 Add the lemon sugar mixture 1/3 at a time & beat into a glossy meringue.
  • Step #8 Beat In the gelatin & the lemon juice until well mixed.
  • Step #9 Cover up & put in the fridge until set about 10 mins.
  • Step #10 Lightly oil a 2 quart mold or 8 individual molds.
  • Step #11 Beat the cream cheese & sour cream until light & fluffy.
  • Step #12 Gently fold the cream cheese mixture into the chilled meringue mixture, thoroughly.
  • Step #13 Pour the mousse into the mold(s).
  • Step #14 Cover up with plastic wrap & put in the fridge at least 2 hrs,.
  • Step #15 Serve cold, garnished with mint & berries.
