Vegetarian Burritos Recipe

Ingredients
  • 4-5 garlic cloves, minced .
  • 3 medium green peppers, sliced .
  • 1/4 tsp cayenne .
  • 5 c cooked pinto beans (or kidney beans) .
  • 1/4 c vegetable oil .
  • 1/2 c black olives, sliced .
  • 4 c onions, sliced .
  • 12 wheat flour tortillas .
  • 1 c sour cream .
  • 1 tbsp ground coriander .
  • salt .
  • Extra toppings .
  • 1 1/3 c sharp cheddar cheese, grated .
  • 1 c corn .
  • 1 1/2 tbsps ground cumin .
  • 1 c cheddar cheese, grated

Directions
  • Step #1 Drain the cooked beans & save the liquid.
  • Step #2 Saute the garlic & onions in oil for several mins until onions are translucent.
  • Step #3 Add the peppers & all of the spices & continue to saute until peppers are tender.
  • Step #4 Cover up the vegetables, remove this from heat, & set aside.
  • Step #5 Mash the beans with a potato masher adding enough of the reserved liquid to reach the consistency of mashed potatoes.
  • Step #6 Mix the mashed beans, corn, olives, vegetables, & cheese.
  • Step #7 Salt to taste.
  • Step #8 Preheat oven to 400°F.
  • Step #9 Place each tortilla flat on the counter.
  • Step #10 Spoon about 1/2 - 3/4 c bean mixture onto the tortilla half closest to you.
  • Step #11 Roll the tortillas from the bottom up, putting pressure on the fililng so that it will be evenly distributed & will reach the open edges of the rolled tortilla.
  • Step #12 Place the burritos, rolled edge down in an oiled baking pan.
  • Step #13 Brush will oil, & bake, cover with a damp cottom cloth, tightly covered with foil wrap for 45 mins.
  • Step #14 Uncover the pan, remove the cloth, sprinkle with extra grated cheese & bake 5 more mins.
  • Step #15 Serve the burritos topped with sour cream.
