Toad In The Hole With Bacon Recipe

Ingredients
  • 2 tsps plain flour .
  • 4 tbsps vegetable oil .
  • 2 tsps worcestershire sauce .
  • 1 tbsp coarse grain mustard .
  • 1/4 lb plain flour .
  • 8 slices bacon (unsmoked if available) .
  • 8 irish sausages .
  • For the hole .
  • For the toad .
  • 2 tsps coarse grain mustard .
  • 1 small onion, sliced .

  • 1 c milk .
  • For the gravy .
  • 1 large egg .
  • 2 tbsps vegetable oil .
  • 2 1/2 c chicken stock (20 oz.) .
  • 1 pinch salt

Directions
  • Step #1 Preheat oven to 375ºF/190ºC The Toad:.
  • Step #2 Wrap the sausages in the bacon & place this In a large-ish roasting tin.
  • Step #3 Scatter the onion over it.
  • Step #4 Drizzle the oil over it & bake for 20 mins.
  • Step #5 The Hole:.
  • Step #6 Sieve the flour & the salt into a bowl.
  • Step #7 Make a well in the center add the egg & slowly beat in half of the milk for two mins.
  • Step #8 Stir in the rest of the milk & mustard.
  • Step #9 Remove the roasting tin from the oven when the sausages are just turning brown & pour the batter over them.
  • Step #10 Cook for a further 40 mins or until done.
  • Step #11 The batter should have risen & it will be a lovely golden brown.
  • Step #12 Note: This can burn easily so keep an eye on it.

  • Step #14 The Gravy:.
  • Step #15 Heat the oil in a saucepan & saute the onion for five mins.
  • Step #16 Stir in the flour & cook for a min then add the mustard, Worcester sauce & chicken stock.
  • Step #17 Bring to the boil, stirring all the time.
  • Step #18 Simmer for 15 mins, checking the seasoning.
  • Step #19 Serve the Toad in the Hole with the gravy poured over it with mashed potatoes & veggies on the side.
