Tofu Pie Recipe

Ingredients
  • 1 c boiling water .
  • 1 (8 oz) container Cool Whip (light, if you prefer) .
  • 1/2 (8 oz) package soft tofu .
  • 2 tsps lemon juice .
  • 1 (3 oz) box Jello gelatin (any flavor) .
  • 1 ready-to-bake pie shell

Directions
  • Step #1 Dissolve jello in 1 c boiling water in a bowl.
  • Step #2 Cool in refrigerator until slightly thickened.
  • Step #3 In another bowl, mix tofu until smooth with mixer mixer.
  • Step #4 Add lemon juice & thickened jello & HALF of cool whip.
  • Step #5 Pour into pie crust.
  • Step #6 Use remaining cool whip to top the jello mixture.
  • Step #7 Refrigerate until set.
