Fannie Farmer's Classic Baked Macaroni And Cheese Recipe

Ingredients
  • 1 (8 oz) package macaroni .
  • 2 c good quality shredded cheddar cheese .
  • 1/2 tsp salt .
  • 4 tbsps butter .
  • fresh ground black pepper, to taste .
  • 1 c cream .
  • 1/2 c buttered breadcrumbs .
  • 4 tbsps flour .
  • 1 c milk

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Cook & drain macaroni according to package directions; set aside.
  • Step #3 In a large saucepan melt butter.
  • Step #4 Add flour mixed with salt & pepper, using a whisk to stir until well mixed.
  • Step #5 Pour milk & cream in slowly; stirring constantly.
  • Step #6 Bring to boiling point & boil 2 mins (stirring constantly).
  • Step #7 Reduce heat & cook (stirring constantly) 10 mins.
  • Step #8 Add shredded cheddar little by little & let simmer an extra 5 mins, or until cheese melts.
  • Step #9 Turn off flame.
  • Step #10 Add macaroni to the saucepan & toss to coat with the cheese sauce.
  • Step #11 Transfer macaroni to a buttered baking dish.
  • Step #12 Sprinkle top with breadcrumbs.
  • Step #13 Bake 20 mins until the top is golden brown.
  • Step #14 (You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow this to cool to about room temp before adding to your freezer - I generally pull it out the night before & allow macaroni & cheese to reach room temperature; I then add the macaroni & cheese to a buttered baking dish, sprinkle with bread crumbs & then bake for 20 to 30 mins, until golden brown on top & bubbling.
