Chicken Or Turkey Crepes With Tarragon Recipe

Ingredients
  • 2 c sliced cooked chicken
  • 1/4 c dry white wine
  • 2 tbsps finely sliced onion
  • 4 tbsps all-purpose flour
  • 3/4 c chicken broth
  • 1/4 c milk
  • 2 egg yolks
  • 3 recipes Basic Crepes
  • 4 tbsps butter
  • 1/4 tsp sliced dried tarragon
  • 1 c milk
  • salt to taste

Directions
  • Step #1 Prepare a basic crepe recipe in advance.
  • Step #2 Crepes can be made & frozen up to several weeks ahead of time.
  • Step #3 Preheat oven to 350 degrees F (175 degrees C).
  • Step #4 Melt butter in a saucepan over med-heat/flame.
  • Step #5 Stir in onion, & cook 2 mins.
  • Step #6 Stir in flour until mixed.
  • Step #7 Slowly whisk in 1 c milk, whisking constantly until smooth.
  • Step #8 Mix in broth, wine, & tarragon; stir over medium-low heat until thickened (about 4 mins).
  • Step #9 In a small bowl, slowly stir 3 tbsps of the hot milk & broth sauce into the egg yolks; then pour egg mixture into sauce, whisking briskly.
  • Step #10 Cook 1 min more, then remove this from heat.
  • Step #11 In a medium bowl, mix together half of the sauce with the chicken.
  • Step #12 Spice up with salt to taste.
  • Step #13 Fill each crepe with 3 tbsps of chicken mixture.
  • Step #14 Roll crepes, & place seam-side down in a 9x13 inch baking dish.
  • Step #15 Thin the remaining sauce with 1/4 c milk, & pour over crepes.
  • Step #16 Bake in a preheated oven 20 mins, or until sauce begins to bubble.
