4 fish fillets (halibut or a white fleshed fish of your choice) .
2 tbsps fresh ginger, peeled, julienned .
For the Garnish .
For the Sauce .
1 c soy sauce .
fresh cilantro .
1/4 c sugar .
salt & pepper .
3 scallions, sliced & smashed .
1/2 inch fresh ginger, peeled & smashed
Directions
Step #1 Preheat the oven to 375°F.
Step #2 Place each fish fillet on a large piece of aluminum foil wrap.
Step #3 Combine the smashed ginger, scallions, oil & salt & pepper & distribute the mixture among the four pieces of fish.
Step #4 Bring up the ends of each piece of foil wrap & close up to form four loose pouches.
Step #5 Place the four pouches on a cookie sheet & place this in the oven for about ten mins.
Step #6 While the fish is cooking, make the sauce by combing the ingredients & stirring until the sugar is dissolved.
Step #7 Open one foil wrap packet & make sure fish is coked through.
Step #8 If so, place each piece of fish on an individual serving plate on which you have pooled a tbsp or two of the warm sauce & garnish with the julienned scallions & ginger.
Step #9 Drizzle the hot oil over the fish & serve, with extra sauce on the side.
