Steamed Fish With Ginger And Scallions Recipe

Ingredients
  • 1 oz sesame oil, heated .
  • 2 tbsps scallions, julienned .
  • 1 1/4 c chicken stock, hot, preferably homemade & unsalted .
  • 4 fish fillets (halibut or a white fleshed fish of your choice) .
  • 2 tbsps fresh ginger, peeled, julienned .
  • For the Garnish .
  • For the Sauce .
  • 1 c soy sauce .
  • fresh cilantro .
  • 1/4 c sugar .
  • salt & pepper .
  • 3 scallions, sliced & smashed .
  • 1/2 inch fresh ginger, peeled & smashed

Directions
  • Step #1 Preheat the oven to 375°F.
  • Step #2 Place each fish fillet on a large piece of aluminum foil wrap.
  • Step #3 Combine the smashed ginger, scallions, oil & salt & pepper & distribute the mixture among the four pieces of fish.
  • Step #4 Bring up the ends of each piece of foil wrap & close up to form four loose pouches.
  • Step #5 Place the four pouches on a cookie sheet & place this in the oven for about ten mins.
  • Step #6 While the fish is cooking, make the sauce by combing the ingredients & stirring until the sugar is dissolved.
  • Step #7 Open one foil wrap packet & make sure fish is coked through.
  • Step #8 If so, place each piece of fish on an individual serving plate on which you have pooled a tbsp or two of the warm sauce & garnish with the julienned scallions & ginger.
  • Step #9 Drizzle the hot oil over the fish & serve, with extra sauce on the side.
