Green Beans And Red Bell Pepper With Cashew Butter Recipe

Ingredients
  • 1 1/2 lbs fresh green beans .
  • 1/8 tsp pepper .
  • 4 tbsps butter .
  • salt .
  • 1 tsp lemon juice .
  • 1/2 c salted cashews .
  • 1/2 tsp salt .
  • 1/4 c sweet red pepper strips

Directions
  • Step #1 Trim ends off beans.
  • Step #2 Bring large pot of water with salt to a boil.
  • Step #3 Add beans & bring back to a boil.
  • Step #4 Cook beans , uncovered for about 8-10mins or until crisptender.
  • Step #5 Drain beans & plunge into cold water.
  • Step #6 Drain & refridgerate.
  • Step #7 Allow beans to come to room temp before remaing procedure.
  • Step #8 In skillet melt butter & sautee red bell pepper for about 2 mins.
  • Step #9 Stir in beans, lemon juice, cashews, salt & pepper.
  • Step #10 Cook over med-heat/flame stirring for about 8mins.
  • Step #11 Transfer mixture to serving bowl.
