Jewish Apple Cake Recipe

Ingredients
  • 1/8 tsp ground cardamom .
  • 1 tbsp lemon juice .
  • 1 tbsp cinnamon .
  • 4 eggs .
  • 3 tsps baking powder .
  • 6 tbsps vanilla sugar .
  • 2 3/4 c sifted flour .
  • 1/3 c orange juice .
  • 1/4 tsp salt .
  • 4 medium apples, peeled, cored .
  • 1 c oil .
  • 2 c vanilla sugar

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Grease & flour a 10-inch tube pan.
  • Step #3 Slice apples thinly, sugar, mix with lemon juice, cinnamon & cardamom; set aside.
  • Step #4 Sift flour, baking powder, & salt together.
  • Step #5 Beat eggs until foamy.
  • Step #6 Gradually beat in sugar, until mixture is thick & fluffy.
  • Step #7 Slowly pour oil into egg mixture, while beating continuously, mix until well mixed.
  • Step #8 Add dry ingredients 1/3 at a time, alternating with orange juice, beating with a wooden spoon until smooth.
  • Step #9 Pour 1/3 of the batter into the pan.
  • Step #10 Drain the liquid from the apples & arrange half of the slices on top of the batter.
  • Step #11 Add another 1/3 of the batter, then the rest of.
  • Step #12 apples, & finally top this with the remaining 1/3 of the batter.
  • Step #13 Bake for approximately 1 hr & 30 mins, or until cake springs back when touched.
  • Step #14 Cool thoroughly before removing from the pan.
  • Step #15 Dust with powdered sugar.
