Ingredients
1 1/2 tsps cumin .
3 tbsps liquid honey .
seasoning salt (can use regular salt also) .
3-4 tbsps oil .
2 1/2 c salsa .
3/4 c slivered almonds .
1 medium onion, sliced .
1 tbsp fresh minced garlic (or to taste) .
pepper .
1/3 c currants (or more if desired) .
2 lbs boneless chicken breasts .
1 tsp cinnamon .
1/2 c water
Directions
Step #1 Spice up chicken pieces with salt & pepper, then brown in oil on all sides.
Step #2 Transfer the chicken in a greased baking dish.
Step #3 In the same frypan, saute onion & garlic; spoon over the chicken in the dish.
Step #4 In a bowl, honey, water, mix the salsa, currants, cumin & cinnamon; pour over the chicken; mix with clean hands to slighty coat the chicken.
Step #5 If you are adding in green bell pepper, just mix in with the salsa/honey mixture.
Step #6 Cover up & bake for about 45-50 mins, or until chicken is done.
Step #7 Sprinkle top with slivered almonds.
Step #8 Delicious.
