Lemon Olive Chicken Recipe

Ingredients
  • 1/2 c sliced Spanish olives with pimento .
  • 1/4 c milk .
  • 4 c hot cooked rice .
  • 1 tbsp vegetable oil .
  • 4 lemon slices .
  • 4 boneless skinless chicken breast halves (about 1 lb) .
  • 1 tbsp lemon juice .
  • 1 (10 3/4 oz) can Campbell's Cream of Chicken Soup or 98% fat-free cream of chicken soup .
  • 1/8 tsp ground black pepper

Directions
  • Step #1 Heat the oil in a 10-inch skillet over medium-high heat.
  • Step #2 Add the chicken & cook for 10 mins or until it's well browned on both sides.
  • Step #3 Remove the chicken & set aside.
  • Step #4 Stir the soup, milk, lemon juice, black pepper & olvies in the skillet.
  • Step #5 Top with the lemon slices.
  • Step #6 Heat to a boil.
  • Step #7 Return the chicken to the skillet & reduce the heat to low.
  • Step #8 Cover up & cook for 5 mins or until the chicken is cooked through.
  • Step #9 Serve with the rice.
