Mediterranean Salmon Recipe

Ingredients
  • 1/2 tsp pepper, divided .
  • 2 tomatoes, seeded, coarsely sliced .
  • 1/4 c red onions, sliced .
  • 3/4 tsp salt, divided .
  • 1/2 c pitted black olives, pitted & coarsely sliced .
  • 1/3 c fresh basil, loosely packed thinly sliced .
  • 4 (6 oz) salmon fillets .
  • 1 tbsp red wine vinegar .
  • 3 tbsps olive oil .
  • 2 tbsps capers, drained

Directions
  • Step #1 Combine tomatoes, olives, red wine vinegar, 1/2 tsp salt, onion, capers, 2 tbsps olive oil, 1/2 tsp pepper.
  • Step #2 Set aside.
  • Step #3 Brush both sides of the salmon with the remaining olive oil.
  • Step #4 Sprinkle top with remaining salt & pepper.
  • Step #5 Heat a large non-stick skillet over medium-high heat or postion broiler rack so that the top of the fish on rack will be 3 inches from heat source-preheat broiler.
  • Step #6 Saute or broil salmon 3-4 mins per side or until cooked through.
  • Step #7 Add basil to reserved tomato mixture.
  • Step #8 Serve with salmon.
