Earthquake Cake Recipe

Ingredients
  • 1 (3 oz) package French vanilla instant pudding .
  • 1 c English toffee bits .
  • 1 (18 oz) package German chocolate cake mix .
  • 1 1/2 c coconut, divided use .
  • 1 (8 oz) carton Cool Whip .
  • 1 1/3 c water .
  • 1/3 c oil .
  • 1 (16 oz) package powdered sugar .
  • 1/2 c butter, softened .
  • 1 tsp vanilla .
  • 2 c milk .
  • 8 oz cream cheese, softened .
  • 3 eggs .
  • 1 1/2 c pecans, divided use

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Lightly grease 9x13 inch cake pan.
  • Step #3 Sprinkle top half the pecans & coconut over bottom of pan.
  • Step #4 Make cake mix as directed on box & pour batter over pecans & coconut.
  • Step #5 Beat together cream cheese, vanilla, butter, & powdered sugar until creamy.
  • Step #6 Drop cream cheese mixture by spoonfuls over cake batter.
  • Step #7 Do not stir in theto batter.
  • Step #8 Bake 40-45 mins, or until tests done.
  • Step #9 Cool completely.
  • Step #10 Make pudding as directed on box & spread over cooled cake.
  • Step #11 Sprinkle top remaining nuts & coconut over pudding, along with half of the toffee bits.
  • Step #12 Spread Cool Whip over pudding & sprinkle with remaining toffee bits.
  • Step #13 Refrigerate for at least 2 hrs before serving.
