Chocolate Macaroon Cupcakes Recipe

Ingredients
  • 3/4 c 1% buttermilk
  • 1 egg white
  • 1 c sugar
  • 1/2 tsp baking soda
  • 1 1/4 c all-purpose flour
  • 1/3 c unsweetened applesauce
  • 2 egg whites
  • 2 tsps confectioners' sugar
  • 1/3 c baking cocoa
  • FILLING:
  • 1 c fat-free ricotta cheese
  • 1/2 tsp coconut or almond extract
  • 1 tsp vanilla extract
  • 1 egg
  • 1/3 c flaked coconut
  • 1/4 c sugar

Directions
  • Step #1 In a mixing bowl, mix the egg whites, egg, applesauce & vanilla.
  • Step #2 Combine the flour, sugar, cocoa & baking soda; slowly add to egg white mixture alternately with buttermilk.
  • Step #3 Spoon half of the batter into 18 muffin c coated with nonstick cooking spray.
  • Step #4 I n another mixing bowl, beat the ricotta cheese, sugar & egg white until smooth.
  • Step #5 Stir in coconut & extract.
  • Step #6 Spoon 1 tbspful in the center of each muffin c.
  • Step #7 Fill muffin c two-thirds full with remaining batter.
  • Step #8 Bake at 350 degrees F for 28-33 mins or until a toothpick inserted in ccake comes out clean.
  • Step #9 Cool for 5 mins before removing from pans to wire racks; cool completely.
  • Step #10 Dust with confectioners' sugar.
