Chicken Caesar Wrap
Ingredients
1/2 c grated Parmesan cheese, plus shavings for garnish
Salt & ground black pepper
1/2 c olive oil, plus
1 tsp Worcestershire sauce
1/2 c mayonnaise
2 12-inch baguettes, cut into 48 1/2-inch thick slices
8 cloves garlic
3 c shredded breast from a large rotisserie chicken
3 tbsps lemon juice
2 tsps olive oil
1 tsp finely grated lemon zest
4 c baby salad greens, romaine, if possible
Directions
Step #1 Adjust oven rack to center position & heat oven to 425F degrees.
Step #2 Mince garlic in a food processor/blender or mixer.
Step #3 With motor running, slowly add 1/2 c of the olive oil.
Step #4 Continue to process for about 30 seconds, then strain oil through a fine-mesh strainer.
Step #5 Add 2/3 of the garlic back into the oil, & reserve remaining garlic for the dressing.
Step #6 Arrange bread on a wire rack set over a baking sheet.
Step #7 Brush garlic oil over bread.
Step #8 Toast until crisp & golden, about 7 mins.
Step #9 Meanwhile, whisk mayonnaise, lemon zest & 2 Tbs.
Step #10 lemon juice, grated Parmesan, Worcestershire, & reserved garlic in a small bowl.
Step #11 (It can be covered & put in the fridged for several hrs.
Step #12 ) When ready to serve, toss dressing with chicken; season to taste with salt & pepper.
Step #13 Toss salad with remaining 2 tsps.
Step #14 of olive oil, & salt & pepper to taste.
Step #15 Drizzle in remaining 1 Tb.
Step #16 lemon juice; toss again.
Step #17 Top each toast with a portion of greens, chicken & a Parmesan shaving.
Step #18 (Toasts can stand uncovered for up to 2 hrs.
