Asian-style Edamame And Corn Recipe

Ingredients
  • 1 tsp sesame seeds, toasted .
  • 1 tsp minced gingerroot .
  • 1/2 tsp minced garlic .
  • 4 large lettuce leaves .
  • 1 tsp sesame oil .
  • 1/3 c rice vinegar .
  • 2 tbsps low sodium soy sauce .
  • 1 c corn .
  • 1/4 c sliced red bell peppers .
  • 2 c cooked & shelled edamame .
  • 1 tsp sugar

Directions
  • Step #1 Whisk dressing ingredients together; adjust seasonings to taste.
  • Step #2 Set aside.
  • Step #3 Add the corn & bell pepper to the edamame, toss with dressing.
  • Step #4 Serve on lettuce greens.
  • Step #5 Makes 4 servings.
  • Step #6 To toast sesame seeds, place this in dry skillet over med-heat/flame.
  • Step #7 Shake carefully until seeds begin to pop & turn golden brown.
  • Step #8 Cool.
