Raspberry Cream Cheese Breakfast Buns Recipe

Ingredients
  • 1 (8 oz) package cream cheese, softened .
  • 1/4 tsp salt .
  • Topping .
  • Buns .
  • Garnish .
  • 1/2 tsp vanilla extract .
  • 2 large eggs, at about room temp .
  • 1/4 c milk .
  • 1/2 c unsalted butter, softened .
  • 1 tsp baking powder .
  • confectioners' sugar .
  • 1 3/4 c all-purpose flour .
  • 1/2 c raspberry preserves .
  • 1 c sugar .
  • 1/2 tsp baking soda

Directions
  • Step #1 Grease & lightly flour 9 large muffin c.
  • Step #2 In a mixing bowl, mix the flour & next 3 ingredients; set aside.
  • Step #3 In a large mixing bowl, butter, & sugar together, using an electric mixer on medium speed, beat the cream cheese, for 3 mins.
  • Step #4 Add in the eggs; beat well.
  • Step #5 Add the dry ingredients in two parts, alternating with the milk & vanilla; mix to mix after each addition.
  • Step #6 Spoon batter into muffin c, filling 2/3 full.
  • Step #7 Drop 3 small dollops (about a tspful each) of raspberry preserves onto the top of each bun.
  • Step #8 Using the tip of a sharp knife, swirl the preserves into the batter, forming a decorative pattern.
  • Step #9 Bake in a 350° oven for 25-30 mins or until pick comes out clean.
  • Step #10 Allow buns to cool for about 30 mins before sprinkling with confectioners' sugar & serving.
