Easy Chicken And Garden Veggies Recipe

Ingredients
  • 1/4 tsp fresh coarse ground black pepper .
  • 1/2 c balsamic vinaigrette or Italian dressing .
  • 1 medium yellow bell pepper, cut into 1/2 pieces .
  • 2 medium plum tomatoes, cut lengthwise in half, then sliced (Roma, about 1 c) .
  • 1/4 c water .
  • 8 oz fresh green beans, trimmed (leave whole) .
  • 1/2 tsp garlic salt .
  • 4 slices bacon, cut into 1/2 pieces .
  • 4 boneless skinless chicken breasts (about 1-1/4 lb.)

Directions
  • Step #1 In a 12” nonstick skillet, cook bacon over med-heat/flame 3-4 mins, stirring every once in awhile, until crisp.
  • Step #2 Sprinkle top both sides of the chicken with garlic salt & pepper.
  • Step #3 Add chicken to bacon in skillet.
  • Step #4 Cook 3-5 mins or until browned on both sides.
  • Step #5 Discard excess bacon drippings if necessary.
  • Step #6 Add water & green beans to skillet.
  • Step #7 Cover up & cook over medium-low heat 8 mins.
  • Step #8 Stir in bell pepper.
  • Step #9 Cover up & cook 3-5 mins, turning & stirring vegetables every once in awhile, until juice of chicken is clear when center of thickest part is cut.
  • Step #10 Stir in tomatoes & dressing.
  • Step #11 Cook uncovered about 2 mins, stirring every once in awhile, until tomatoes are thoroughly heated.
