Cold Summer Soup Recipe

Ingredients
  • 2 1/2 c tomato juice or vegetable juice .
  • 1/2 c green onions, finely sliced .
  • 1 c tomatoes, peeled, seeded, finely sliced fresh .
  • 1/2 c bell peppers, finely sliced .
  • 1/2 tsp worcestershire sauce .
  • 2 tbsps extra-virgin olive oil .
  • 2 tsps fresh flat-leaf parsley, finely sliced .
  • 3 tbsps white wine vinegar .
  • 1/2 tsp fresh ground black pepper .
  • 1/2 tsp salt .
  • 1 large garlic clove, minced .
  • 1/2 c celery, finely sliced

Directions
  • Step #1 Combine all the ingredients In a large-ish glass or stainless steel bowl.
  • Step #2 Cover up & put in the fridge overnight.
  • Step #3 Serve cold.
