Ingredients
3 c water .
10 whole kaffir lime leaves .
CURRY PASTE .
1/2 c sweet basil .
1 1/2 lbs catfish, Cut Into 1-inch Slices .
1 tsp shrimp paste .
8 shallots .
1 tsp canned peppercorns .
1/4 c fish sauce (Nam Pla) .
1/4 c sliced green jalapeno peppers .
2 tbsps oil .
8 dried jalapeno peppers .
6 garlic cloves .
2 tbsps sliced lemongrass .
1/4 c sliced lesser ginger .
1/2 c Japanese eggplants .
1/2 tsp salt
Directions
Step #1 Combine all the ingredients for the curry paste, using a mortar & pestle or a mixer.
Step #2 Heat a large saucepan & add the oil & curry paste.
Step #3 Stir-fry for 1 min on medium-high heat.
Step #4 Add the fish, fish sauce, water & eggplant & heat to boiling.
Step #5 Cook, stirring, for 3 mins.
Step #6 Add the remaining ingredients & remove this from the heat.
Step #7 Serve.
