Gaeng Paa Pla Dook (jungle Curry With Catfish) Recipe

Ingredients
  • 3 c water .
  • 10 whole kaffir lime leaves .
  • CURRY PASTE .
  • 1/2 c sweet basil .
  • 1 1/2 lbs catfish, Cut Into 1-inch Slices .
  • 1 tsp shrimp paste .
  • 8 shallots .
  • 1 tsp canned peppercorns .
  • 1/4 c fish sauce (Nam Pla) .
  • 1/4 c sliced green jalapeno peppers .
  • 2 tbsps oil .
  • 8 dried jalapeno peppers .
  • 6 garlic cloves .
  • 2 tbsps sliced lemongrass .
  • 1/4 c sliced lesser ginger .
  • 1/2 c Japanese eggplants .
  • 1/2 tsp salt

Directions
  • Step #1 Combine all the ingredients for the curry paste, using a mortar & pestle or a mixer.
  • Step #2 Heat a large saucepan & add the oil & curry paste.
  • Step #3 Stir-fry for 1 min on medium-high heat.
  • Step #4 Add the fish, fish sauce, water & eggplant & heat to boiling.
  • Step #5 Cook, stirring, for 3 mins.
  • Step #6 Add the remaining ingredients & remove this from the heat.
  • Step #7 Serve.
