Italian Bread Creamy Pesto Pepperoni Pizza Recipe

Ingredients
  • 2 (4 oz) packages pepperoni, sliced (use more if desired) .
  • 1/4 c grated parmesan cheese (use more to taste if desired) .
  • 3 c ricotta cheese .
  • 1 c sliced black olives (very well drained pat dry with a paper towel, can use more) .
  • 2 1/2 c shredded mozzarella cheese (or to taste) .
  • 2 large Italian bread, unsliced .
  • salt & pepper .
  • 1/3 c prepared pesto sauce (use more or less if desired to taste, store-bought or homemade)

Directions
  • Step #1 Place one oven rack in upper-third of the oven, & the second oven rack on the lower third.
  • Step #2 Heat oven to 450 degrees (regular or convection air-bake).
  • Step #3 Half each loaf lenghwise, then crosswise to make 8 pizza crusts.
  • Step #4 In a bowl mix ricotta, Parmesan, pesto, salt & pepper.
  • Step #5 Spread on the bread crusts.
  • Step #6 Sprinkle top the olives on top of the ricotta.
  • Step #7 Top with pepperoni slices.
  • Step #8 Top with shredded mozza cheese.
  • Step #9 Place 4 pizzas on one baking sheet & the other 4 on another baking sheet.
  • Step #10 Place on sheet on one rack & the other on the other rack.
  • Step #11 Bake for about 10-12 mins (the cheese should be well melted).
  • Step #12 Cool for about 5 mins.
