Rice Enchiladas Recipe

Ingredients
  • 8-12 corn tortillas .
  • 1 c uncooked long-grain rice (Cooked according to package directions) .
  • sliced ripe olives .
  • 1/2 lb shredded monterey jack cheese or cheddar cheese .
  • 1 (10 oz) can enchilada sauce (I like mine saucy, so I use 1 1/2-2 cans.) .
  • 1/4 c sliced green onions

Directions
  • Step #1 Put rice in medium bowl, stir in the onion & half the enchilada sauce.
  • Step #2 Warm tortillas in microwave to soften or heat small amount of oil in skillet & place tortillas in oil just until soft & warm.
  • Step #3 If heating in oil, drain on paper towels).
  • Step #4 Spread each tortilla with some rice mixture & some cheese.
  • Step #5 You should end up using about half of the cheese.
  • Step #6 Roll up each tortilla & place this in baking dish.
  • Step #7 Pour remaining sauce over.
  • Step #8 Cover up & bake this at 350 for 25 mins.
  • Step #9 Uncover & sprinkle with cheese & olives.
  • Step #10 Return to oven until cheese melts.
