French Style Apricot Tart Recipe

Ingredients
  • 1 ready-made pie crust (round, 12 inches) .
  • 1/2 c sugar .
  • 1 egg .
  • 1 egg yolk .
  • 1 (30 oz) can apricots in syrup (halves) .
  • 1/2 c ground almonds .
  • 1 1/4 c whipping cream .
  • 1/3 c dried shredded coconut

Directions
  • Step #1 Preheat oven to 180 C degrees.
  • Step #2 Lay pie crust on pie plate & punch with a fork.
  • Step #3 In a medium bowl beat eggs & sugar.
  • Step #4 Add almonds, coconut then cream.
  • Step #5 Pour the just-made mix onto the pie crust.
  • Step #6 Add apricots (without syrup).
  • Step #7 Lay them out on bent side.
  • Step #8 Bake at 180 C for about 40-45 mins.
  • Step #9 Options: You can easily adapt this recipe, replacing apricots by peaches and/or pears as well as mixing the different fruits.
  • Step #10 You may also replace the grounded almonds by the coconut & vice-versa.
