Date Nut Pinwheel Cookiesi Recipe

Ingredients
  • 3 eggs
  • 1 c butter
  • 4 1/2 c all-purpose flour
  • 1/2 tsp baking soda
  • 8 oz dates, pitted & sliced
  • 1/2 c white sugar
  • 1/4 tsp salt
  • 2 c packed brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 c water
  • 1 c sliced pecans

Directions
  • Step #1 Cream together butter or margarine & brown sugar.
  • Step #2 Add eggs, one at a time, beating well.
  • Step #3 Sift together cinnamon, salt, baking soda, & flour.
  • Step #4 Add dry ingredients to egg mixture slowly, mixing well.
  • Step #5 Add vanilla.
  • Step #6 Divide dough into three portions & place on waxed paper.
  • Step #7 Chill until set.
  • Step #8 While batter is chilling, make filling.
  • Step #9 Combine dates, sliced pecans, water & white sugar over low heat/flame.
  • Step #10 Heat until filling is of a paste-like consistency.
  • Step #11 Roll dough out to make a thin layer.
  • Step #12 Place 1/3 of filling on the dough & roll up.
  • Step #13 Repeat the process for the other 2 sections of dough.
  • Step #14 Rolls can be baked right away or frozen until needed.
  • Step #15 Preheat oven to 350 degrees F (180 degrees C).
  • Step #16 Cut 1/4 inch slices off of rolls with a sharp knife.
  • Step #17 Place slices on greased cookie sheets & bake for 15 mins.
