Mixed Vegetables A La Greque Recipe

Ingredients
  • 200 ml olive oil .
  • 3 sprigs fresh thyme .
  • 20 coriander seeds .
  • 1 liter water .
  • 1 bunch baby carrots .
  • 1 bunch baby leeks, trimmed .
  • 1 bunch baby turnips .
  • 200 ml white wine vinegar .
  • 6 asparagus .
  • 1 tsp salt .
  • 1/2 cauliflower, divided into florets .
  • 3 lemons, juice of .
  • 1 bunch baby beets

Directions
  • Step #1 Wash & trim vegetables.
  • Step #2 Put water, olive oil, vinegar, lemon juice, thyme & coriander seeds & salt into a large saucepan.
  • Step #3 Bring to the boil.
  • Step #4 Continue to boil until liquid emulsifies.
  • Step #5 Meanwhile bring a separate pot of water to boil & add the beetroot.
  • Step #6 Cook until tender.
  • Step #7 Drop the remaining vegetables into the boiling emulsion adding leeks & asparagus last.
  • Step #8 Cook for about 10 mins.
  • Step #9 Drain all vegetables & reserve emulsified liquid.
  • Step #10 To serve: Combine all vegetables on a platter & pour reserved liquid over.
  • Step #11 Delicious served hot or cold.
