Caramel Pear And Macadamia Upside-down Cake Recipe

Ingredients
  • 2 pears, peeled cored & cut into 8 wedges .
  • 1/4 c self-raising flour .
  • 1/3 c macadamia nuts, sliced .
  • 3 eggs .
  • 1/2 c almond meal .
  • 1/2 c flour .
  • 1 tsp ginger .
  • 1/4 c cream .
  • 1 1/2 c brown sugar .
  • 1/3 c sour cream .
  • 1/4 c water .
  • 175 g butter, softened

Directions
  • Step #1 Preheat oven to 180 Degrees Celsius Grease a round 20cm cake pan & line base with non-stick baking paper.
  • Step #2 Melt 20g butter in frying pan & heat until foaming.
  • Step #3 Add pears cut side down & cook 2 mins eahc side until golden brown.
  • Step #4 Arrange pear over base of cake pan.
  • Step #5 Melt 25g remaining butter until foaming.
  • Step #6 Add 1/2 c sugar stirring for 1 min.
  • Step #7 Add cream & water & cook for 2 mins until mixture thickens.
  • Step #8 Remove from heat & pour half the caramel sauce over the pears.
  • Step #9 Sprinkle top pears with nuts.
  • Step #10 Using electric beater, beat ground ginger, remaining butter & remaining sugar in medium bowl.
  • Step #11 Add eggs 1 at a time combining well after each addition.
  • Step #12 Use a wooden spoon to stir in the the flours, almond meal & sour cream until just mixd.
  • Step #13 Spoon mixture over pears & smooth the surface.
  • Step #14 Bake in oven 1 1/2 hrs until skewer inserted comes out clean.
  • Step #15 Remove from oven set aside 5 mins before inverting onto a plate.
  • Step #16 Drizzle cake with reserved caramel sauce & serve warm with vanilla ice-cream or cream.
