Thai Mince With Fragrant Rice Recipe

Ingredients
  • 1/2 tsp chili powder .
  • 180 ml chicken stock .
  • 2 tsps cornflour .
  • 1 garlic clove, sliced .
  • 1 tbsp vegetable oil .
  • 1 red pepper, cored, seeded & roughly sliced .
  • 50 g fresh basil leaves .
  • 1 onion, halved & sliced .
  • 250 g thai fragrant rice .
  • salt & freshly ground black pepper .
  • 2 tbsps dark soy sauce .
  • 500 g pork mince

Directions
  • Step #1 Cook the rice in a pan of boiling water for about 15 mins.
  • Step #2 Meanwhile, heat the oil in a pan & cook the onion for 3-4 mins until golden.
  • Step #3 Stir in the garlic & red pepper & cook for 4 mins, then add the mince & chilli powder & cook for 2-3 mins until well browned.
  • Step #4 Stir in the stock, bring to the boil & let simmer for 5 mins.
  • Step #5 Blend the cornflour with 1 Tbsp of water & the soy sauce until smooth, add to the pan & stir until slightly thickened; season & stir in the the basil leaves.
  • Step #6 Drain the rice & spoon onto plates, top this with the thai mince & serve this with a scattering of fresh basil leaves.
