Mexican Bean Pasties Recipe

Ingredients
  • milk, for glazing .
  • 1 red capsicum, seeded & sliced .
  • 4 sheets frozen puff pastry, thawed .
  • 1 c tasty cheese, grated .
  • 2 tomatoes, sliced .
  • 1 potato, peeled & sliced .
  • 420 g mexican style beans, drained .
  • 1 onion, sliced .
  • 2 tbsps sesame seeds .
  • 1 tbsp olive oil

Directions
  • Step #1 Preheat oven to 200 Degrees Celsius.
  • Step #2 Lightly grease 2 baking trays.
  • Step #3 Heat oil in frying pan.
  • Step #4 Saute capsicum, potatoes & onion for 3 mins until onion is tender.
  • Step #5 Add tomatoes.
  • Step #6 Cook 2 mins.
  • Step #7 Remove from heat & stir in the beans & cheese.
  • Step #8 Spice up to taste.
  • Step #9 Cut each pastry sheet into 4.
  • Step #10 Place 2 tbs filling in centre & fold in half diagonally, wetting edges with water.
  • Step #11 Seal to close with a fork pressed on edges.
  • Step #12 Make 2 slits on top of pastry to allow steam to escape.
  • Step #13 Brush with a little milk & sprinkle with sesame seeds.
  • Step #14 Bake 15-20 mins.
