Danish Bubble Recipe

Ingredients
  • 1/2 c oil or butter .
  • 4 eggs .
  • 1 c grated cheddar cheese .
  • 2 tsps worcestershire sauce .
  • 1-2 c leftover meat such as roast beef .
  • 1 1/4 c sliced onions .
  • 2 c cold cooked potatoes .
  • salt & pepper .
  • 6 slices lightly cooked bacon, sliced .
  • 1 bunch chives

Directions
  • Step #1 Chop onions finely & dice meat & potatoes into 1 inch cubes.
  • Step #2 Heat a third of the oil or butter in frying pan.
  • Step #3 Brown the meat until golden brown & remove meat from pan.
  • Step #4 Add another third of the oil or butter & brown the potatoes at high heat until they are golden & crispy on the outside.
  • Step #5 Remove potatoes from pan.
  • Step #6 Add the remaining oil or butter to pan & cook the onions until clear.
  • Step #7 Add meat, bacon, chives & potatoes to pan.
  • Step #8 & heat through.
  • Step #9 Spice up with salt, pepper & worchestershire sauce.
  • Step #10 Fry the eggs in butter, sunny side up & place on top of meat mixture.
  • Step #11 (You can also scramble the eggs & mix all together).
  • Step #12 Top all of this with the grated cheddar & serve hot.
