Broccoli, Avocado & Pecan Salad W/dressing Recipe

Ingredients
  • 1 avocado .
  • 1 tbsp salt .
  • 1 tbsp fresh lemon juice .
  • 1 tbsp minced Italian parsley .
  • 1/2 c coarsely sliced pecans .
  • Salad .
  • 1/4 c virgin olive oil .
  • 1 tbsp fresh lemon juice .
  • Dressing .
  • salt .
  • 1 1/2 lbs broccoli .
  • 1 tbsp Dijon mustard

Directions
  • Step #1 Cut florrettes from broccoli.
  • Step #2 Bring a saucepan of water to boil & add salt.
  • Step #3 Add florrettes & boil until barely tender, about 3 mins.
  • Step #4 Drain & cool under running water; drain again & place this in salad bowl then set aside.
  • Step #5 Peel & pit avocado then cut into cubes; place this into small bowl & toss with 1 T lemon juice.
  • Step #6 Add avocado to broccoli & add pecans.
  • Step #7 For dressing, in a small bowl stir this together 1 T lemon juice, mustard & salt to taste until well mixed; add olive oil & parsley & stir vigorously until mixed.
  • Step #8 Pour dressing over salad, toss carefully & serve.
