Ingredients
1 1/2 c beef broth or veal broth .
6 (6-8 oz) sirloin strip steaks .
3 shallots, sliced .
1 c cream .
1 tbsp olive oil .
4 tbsps cracked peppercorn mix (black, green & pink) .
salt .
1 c cabernet sauvignon wine (pick a good one) .
2 tbsps butter .
kosher salt
Directions
Step #1 Spice up steaks with peppercorn & Kosher salt.
Step #2 In a heavy saute pan, over med-heat/flame, add olive oil & 1 tbsps butter.
Step #3 Place steaks in pan & cook for 2 to 2-1/2 mins on each side to medium-rare.
Step #4 Set aside.
Step #5 Pour off most of the fat, reduce heat to medium & add shallots.
Step #6 Cook, stirring until soft.
Step #7 Add cabernet & reduce to glaze.
Step #8 Add broth & reduce by half.
Step #9 Add cream & reduce until thickened.
Step #10 Spice up with salt.
Step #11 Pour over steak & serve.
