Classic Peppersteak With Cabernet Sauce Recipe

Ingredients
  • 1 1/2 c beef broth or veal broth .
  • 6 (6-8 oz) sirloin strip steaks .
  • 3 shallots, sliced .
  • 1 c cream .
  • 1 tbsp olive oil .
  • 4 tbsps cracked peppercorn mix (black, green & pink) .
  • salt .
  • 1 c cabernet sauvignon wine (pick a good one) .
  • 2 tbsps butter .
  • kosher salt

Directions
  • Step #1 Spice up steaks with peppercorn & Kosher salt.
  • Step #2 In a heavy saute pan, over med-heat/flame, add olive oil & 1 tbsps butter.
  • Step #3 Place steaks in pan & cook for 2 to 2-1/2 mins on each side to medium-rare.
  • Step #4 Set aside.
  • Step #5 Pour off most of the fat, reduce heat to medium & add shallots.
  • Step #6 Cook, stirring until soft.
  • Step #7 Add cabernet & reduce to glaze.
  • Step #8 Add broth & reduce by half.
  • Step #9 Add cream & reduce until thickened.
  • Step #10 Spice up with salt.
  • Step #11 Pour over steak & serve.
