Almost Whole Wheat Apple Crisp Muffins Recipe

Ingredients
  • 1/2 tsp allspice .
  • 1 tbsp baking powder .
  • 3 apples, peeled, cored & cut into 30 1/2 inch slices .
  • 1 tsp baking soda .
  • 1/4 tsp salt .
  • 3/4 c egg substitute .
  • 1/2 tsp allspice .
  • 1/2 c sugar substitute (Splenda) .
  • 1/4 c canola oil .
  • 1 1/2 c nonfat milk .
  • Topping .
  • 1/2 tsp cinnamon .
  • 3/4 c oatmeal, uncooked .
  • 1 c whole wheat pastry flour .
  • 1 3/4 c all-purpose flour .
  • 1/2 tsp cinnamon .
  • Batter .
  • 1/2 c brown Sugar Twin

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Lightly spray muffin tin with cooking spray.
  • Step #3 Mix together apples, allspice & cinnamon & set aside.
  • Step #4 Combine flours, cinnamon, baking powder, oats, sugars, baking soda, allspice & salt In a large-ish bowl.
  • Step #5 In a separate bowl, wisk egg substitute & canola oil.
  • Step #6 Add milk & mix well.
  • Step #7 Stir wet ingredients into dry ingredients until just moistened.
  • Step #8 Spoon into prepared muffin tins & top each with two slices of apple.
  • Step #9 Press apple slices lightly into batter.
  • Step #10 Bake for 20 mins or until a toothpick comes out clean.
