Golden Castle Pudding Recipe

Ingredients
  • 4 tbsps golden syrup or honey .
  • 8 tbsps creme fraiche or ready-made custard, to garnish .
  • 1/2 tsp vanilla .
  • 1 tbsp water .
  • 1/2 tsp salt .
  • 1/2 c sugar .
  • 1 1/2 tsps baking powder .
  • 1/2 c butter .
  • 1 c flour .
  • 2 medium eggs, beaten

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Cut circles of parchment paper to fit the bottom of 4 (5 oz) ramekins.
  • Step #3 Spray the ramekins with non-stick cooking spray & place the circles in the bottom.
  • Step #4 Mix together the flour, baking powder & salt; set aside.
  • Step #5 Cream the butter & sugar until pale & creamy; stir in the vanilla.
  • Step #6 Gradually beat in beaten eggs, alternating with 1 tbsp of flour; beating well after each addition.
  • Step #7 When the mixture is smooth, add any remaining flour & fold in carefully.
  • Step #8 Add a tbsp of water & mix to form soft dough that will drop easily off a spoon.
  • Step #9 Divide the mixture among the 4 ramekins, place on baking sheet & bake in a preheated oven for 25 mins or until firm & golden brown.
  • Step #10 Allow the puddings to stand for 5 mins; run a sharp knife around sides & turn out on dessert plate, discarding paper.
  • Step #11 Heat the syrup or honey & pour over the puddings; garnish with a couple of tbsps crème fraiche or ready-made custard.
